Sauvignon DOC
ALCOHOL CONTENT: 13% volume.
GRAPE VARIETIES USED:100% Sauvignon.
PRODUCTION AREA AND EXPOSURE:vineyards of the Eastern Hills of Friuli; east and north-east.
SOIL TYPE:marly with balanced amount of clay and rich in skeleton (flish) with a yield of 0.8 -1 Kg. per plant.
TRAINING SYSTEM:single-arched cane and Sylvoz short cane.
VINTAGE:harvested by hand into crates at the beginning of September.
VINIFICATION:soft pressing of the grape. A quota of the grapes is subjected to cold maceration (5° C.) for 7–8 hours. The must is then subjected to cold settling and then decanted for fermentation at a controlled temperature of 16-17° C.
MATURATION AND AGEING:yeast contact until the spring, when it is bottled and aged in the bottle for a further few months.
ORGANOLEPTIC CHARACTERISTICS: white wine with delicate greenish tinges. Assertive aroma reminiscent of tomato leaves, pepper, sage, mint, white peach, papaya and other exotic fruits and elderflower. Aromatic, mineral-driven palate, full-bodied with good acidity.
SUGGESTED PAIRINGS:best with raw and cooked fish starters, soups and purées, asparagus and fried fish.
HOW TO SERVE: at a temperature of 10° C in good-sized glasses which allow its fragrance to be appreciated to the full.
