Ventricina

Ventricina is a typical product of the Abruzzo and Molise regions. It is characterised by the presence of coarsely ground lean meat from pork leg and fillet, and large pieces of diced pancetta. The lean and fatty parts are highly distinguishable in the salami slice. The taste is distinctive, mild and spicy at the same time, thanks to the presence of red chili pepper and fennel seeds.
