GRAPE VARIETIES USED: Cabernet Franc 100%
PRODUCTION AREA AND EXPOSURE: vineyards of Prepotto (Udine) at an altitude of160 m. asl facing south east.
SOIL TYPE: Eocene marl rich in potassium and microelements, good balance of clay and skeleton; poor in organic substance.
TRAINING SYSTEM: Guyot and Sylvoz short cane.
VINTAGE: Harvested by hand into crates at the end of September.
VINIFICATION: destemming and pressing of the grapes, maceration for over a weekwith daily délestage. Malolactic fermentation completed in wood.
MATURATION AND AGEING: in stainless steel tanks and barrels of different cycles for approx. 8 months. Aged in the bottles for several months more before sale.
ORGANOLEPTIC CHARACTERISTICS : in the Friuli region this noble French grape variety has found the ideal microclimate in which to best express its characteristic features. Its ruby red or purplish colour and grassy aromas render it quite unique. As the wine ages, its characteristic fruity and spicy tones – green pepper and nutmeg -come to the fore. Austere, assertive body, with pleasing tannins.
SUGGESTED PAIRINGS: perfect with grilled meats, roasts, flavourful dishes and mature cheeses, which exalt its full, powerful flavour.
HOW TO SERVE: at a temperature of 18-20° C in ample, long-stemmed glasses.
