Levoni roasted arista is made from two pork loin wrapped in defatted belly and flavoured with a blend of aromatic herbs and wine. Pork belly is dry salted and loins are salted in brine. The result arista is the steamed cooked and roasted in a dry oven. Its taste is delicate and appetizing slices are compact.
