Harvest Date: September 10th-20th ; Harvesting: hand picked into slatted packing cases

Fermentation and Aging:

Fermentation: in stainless steel tanks ; Fermentation Temperature: 28° centigrade (82° Fahrenheit)

Fermentation Length: 7 days  ; Skin Conctat: 12 days

Aging: for 18 months in 60 gallon, medium toasted French oak barrels

Bottle Aging: 6 months ; Production: 15,000 bottles (75 cl)

Alcohol By Volume: 13,5%

Notes: The rich color is a bright and substantial garnet red. Immediately the scents are reminiscent of wild berries, violets, cherries, with notes of thyme and marjoram, all wrapped in a mix of carob, licorice, sandalwood with a nuanced measure of oak. The intense and complex bouquet does not contradict the soft and fresh taste, which is backed by a touch of light tannic and a mineral finish. Enduring and persistent, the taste goes well with baked lamb with potatoes and rosemary. The wine is fermented in stainless steel and aged in oak barrels for an average of 18 months.
